BUTTERNUT SQUASH & CHILLI SOUP - EASY!

I always think that December is such a busy month - all that buying of gifts for our families and friends, writing and posting off all those Christmas cards takes time, then there's cleaning the house and decorating it for the "big day".

December is often a time when all I fancy is a bowl of homemade soup - it's quick to make, it's cheap (just the ticket when I've spent that little too much on buying gifts) and quite honestly sometimes all you feel like is something warming and tasty!

Butternut Squash and Chilli Soup

1 medium butternut squash
1 large white onion
drizzle of Ownsworth's Rapeseed Oil
2-3 cloves of garlic (crushed)
1 tsp dried chilli flakes 
1 pint vegetable stock
salt & pepper to taste
natural yoghurt for decoration
pinch of chilli flakes for decoration


Method

Peel the butternut squash and onion, then cut both into cubes about the size of a walnut.  Toss into a roasting tray and drizzle with our delicious cold pressed rapeseed oil.  Cover the roasting tray with tin foil then pop into a 180oC/350oF/Gas Mark 4 oven and gently roast for approximately 25-30 minutes or until nicely soft, but not browned. (You can test if your butternut squash is softened by piercing with a fork or sharp knife.  If they need 5 or 10 minutes longer - just pop in for a little longer.  Every oven is different and fan assisted ovens cook faster - like mine).

Transfer the softened butternut squash and onion to a large saucepan.  Add the crushed garlic cloves, vegetable stock and chilli flakes.  (If you aren't a big fan of chilli, then leave this part out and just add a few for decoration when your soup is made). Season well with salt and pepper to taste.

Gently cook the chunky soup for 10-15 minutes on your stove top, then turn the heat off and allow to cool slightly before you transfer about 1/3rd of the soup to a blender to blend to a smooth consistency.  Do the same another couple of times.  When you have blended it all you'll have a delicious, tasty, light soup. 

To serve, gently warm through before ladling out into your favourite soup bowl (my friend Karen bought this one for me and I love it!).  You can drizzle a little natural yoghurt on top of your soup and decorate with a pinch of dried chilli flakes.  

Take 5 minutes out of the day, enjoy your bowl of soup! and enjoy Christmas with your family and friends!
